If tacos were human, they would be my best friend. They’re everything I want in life – warm, spicy, filling, comforting, and hella cool. I like a good fake meat taco, but these Potato Verde Tacos from the Happy Herbivore meal plan are are infinitely better than meat-like product made from soy, wheat, or a giant list of words hard to pronounce. These tacos have fresh spinach, lovely subtle heat from poblano, and the solid reassurance of potato chunks. Potatoes are a miracle food. They’re amazing mashed, boiled, steamed, baked, and fried. Potatoes fill all the empty places – in my stomach and in my soul.
I’m truly loving the family meal plan from Happy Herbivore. I didn’t expect to love it so much, but having an exact plan of what to cook when I get home, that takes thirty minutes or less makes my day so easy. I have eaten healthful, satisfying food all week. Every night I have dinner, and every day I eat the leftovers for lunch. And these tacos were the best meal yet. I could barely take pictures because they smelled so good. Luckily, they look as good as they taste!
Do me a favor. Do yourself a favor. Make tacos and put a poblano pepper and potatoes in them. Top with salsa and stuff your face. No one will judge you if you get messy, because they will be too busy to stuffing their faces to pay attention.
