After a short break, Weekend Reads are back! These are my five favorite links from around the web this week!
1. If you like butternut squash, check out this Roasted Butternut Squash and Kale with Vegan Parmesan Cheeze recipe from Bubbles and Booyah. I’ll be honest, I’m not much for kale. But I love butternut squash, and the combination of that and vegan parmesan sounds great! NOTE: The key to great vegan parmesan is to spring for the good Nutritional Yeast. DON’T get the bulk bin stuff that Whole Foods sells. It’s really awful. I thought I hated nutritional yeast until I tried the good kind, and now I want to sprinkle it on everything!

2. When I first went vegan, I spent hours in the grocery store reading labels and googling things to find out if they were vegan friendly. This handy Guide to Plant-Based Grocery Shopping from Honest Beans would have been a lifesaver! If you’re new to this lifestyle, or even if you’re an old hat, check this out for great tips on making your shopping trips less stressful.

3. I know Christmas is over (so sad!), but if you need to give a gift in the future, why not try giving an edible one? I have the book that Vegan Moes reviews in this blog post, Vegan Food Gifts and I love it. It has all kinds of recipes for edible gifts, so that you can give that special person something tasty instead of trinkets that will just collect dust on a shelf. This link shares one of the recipes from Vegan Food Gifts, the Blueberry Oatmeal Chocolate Chip Cookie Mix!

4. Choosing Raw is, as you may know, the very first blog I came across when researching a plant-based diet. I read Choosing Raw religiously, and have tried many of her recipes. This Cream of Celeriac and Fennel Soup looks perfect for a cold winter night.

Check back later this week! I’m working on a curried green bean soup recipe that will be posted soon!
