Is it Sunday again already? I feel like this week has just flown by. I’m happy to report that I’ve done some sort of workout five days this past week, and I’m planning to start my Monday right with a Zumba class tomorrow night. As tired as working out makes me, I find that I’ve slept a bit better and have had more energy throughout the day. That also might have something to do with the awesome green smoothies I’ve been making each morning, like this one:
I’ve got great things planned for this week, including a recipe for roasted one-bite potatoes with sauce and a cherry banana ice cream that is to die for. But for now, here are the weekend reads!
1. I am one of those people who like to eat dough. I’ll eat cookie dough, bread dough, pie dough, any kind of dough I can get my hands on. So when I saw these Pie Crust Cookies with Bourbon Apple Butter from Morsels and Moonshine, I was immediately interested. And to add bonus points, the recipe looks super easy!
2. In the same vein (desert) are these fabulous looking Baked Chocolate Donuts from Pumpkin and Peanut Butter. Baked chocolate donuts were always my favorite, and this recipe includes a vegan option (just sub a flax egg for a chicken’s egg). Now I’ve got a reason to go buy a donut pan!
4. I love fries. Fries are my ultimate comfort food, unless I’m craving pasta. They’re usually greasy, salty, and oh so unhealthily delicious. I’ve had success making fries at home in the oven, but usually I use a spritz or two of oil to help the cooking. These Super Crispy Oven Fries from Klunker’s Kitchen may just solve that problem! Crispy fries without the added fat and unnecessary calories of oil? Yes please!
5. Last but not least is this awesome how-to from Pinch of Yum that tells us how to make our own Chipotle Sofritas Veggie Bowl! I like Chipotle, but at seven bucks a pop I don’t make a habit of eating there every day. Thankfully, the answer to eating out is always cooking it yourself, at home, for less money and more leftovers.
